Pearled Barley Chicken
It is always hard to write after a break. We got back from Poland this week and I am still trying to fight jet lag and get back into my routine. Not easy. Especially the jet lag part.. But it was so much fun to see our family and spend some time together. Eryk was flooded with love, hugs and kisses and we got to eat our favorite foods that our moms prepared for us. So yummy! We took a lot of walks. Warsaw is beautiful this time of year. It is still warm enough to be outside and enjoy it, still a lot is going on in the city, but at the same time kids are back in school and streets, restaurants and parks are not so crowded anymore. We got to see some friends. Some, because those two weeks passed by quickly. But we’re grateful for what we got to do this time and hope next one will come soon.
This dish somewhat reminds me of Poland and our cuisine. We do a lot of grains – barley, buckwheat, millet, spelt, etc., so each time I prepare them I think about home. This chicken with barley is a one pot dish with a comfort food feel. It is easy to prepare and perfect for a rainy day, like one we have here in Iowa today.
Ingredients:
- 1 chicken breast
- 2 medium carrots, sliced
- 1 green bell pepper
- 1 medium onion, chopped
- 2 tablespoon olive oil
- 2 cups chicken broth
- 3/4 cup pearled barley
- 2 tablespoons parsley
Instructions:
- Cut chicken into small, approx 1 inch cubes.
- In a medium pot heat up the olive oil on medium high.
- Brown the chicken.
- Reduce the heat to medium low and add the onion and carrots. Cook until onion becomes translucent, ~10 minutes.
- Add barley, mix well and cook for ~3 minutes stirring often.
- Add chicken broth, stir and cook for ~40 minutes on low heat, until barley is cooked. Add more liquid if needed.
- Stir in parsley, cook for additional 2-3 minutes and serve.
- Enjoy!
