Horseradish Carrot Salad
This is another taste of my childhood. For some reason, maybe because of the Holidays, maybe because I am getting ready for my baby’s arrival, I am making this sentimental trip to my childhood very often recently. Until now I have enjoyed variety of recipes from places where I have been living, which was, I guess, a natural part of adaptation to new culture. It has been fun and I have been truly enjoying it. Nevertheless at the same time my fascination with “foreign” food resulted in negligence of flavors, foods, recipes that I grew up with. Now, I think, it is the time to go back to my roots.
This salad is super easy, as you can see just by looking at the recipe. The mix of fresh carrots and apple is very refreshing and horseradish gives a nice kick to it. It tastes the best when served with meat or fish (meat being my preference in this case), but it can also be enjoyed on its own, as a delicious snack.
Nutritional note – don’t try to make it fat free by using fat free yogurt or low fat sour cream. The amount of fat provided here is minimal and necessary to absorb part of the vitamins from the carrots and apple. Just relax and enjoy this wonderful taste mix!
Ingredients:
- 4 medium carrots
- 1 apple
- 1 tablespoon horseradish (I used “cream style”, but freshly grated would be perfect)
- 3 tablespoons sour cream
- 1/4 teaspoon salt
- 1/2 – 1 teaspoon sugar
Instructions:
- Wash and peel carrots and an apple. Core the apple.
- Shred them on a box grater using a large hole side, place in medium bowl.
- Add sour cream, horseradish, salt and sugar.
- Mix well.
- Serve and enjoy!
