Healthy breakfast/light lunch/quick dinner – pick and choose!
So I lost 4 hours from my afternoon yesterday. Kind of unexpectedly. Besides being upset with myself for letting this happen in a first place I ended up with crying baby and no ideas for our dinner that should be ready within an hour or so. In such situation I recommend letting it go in a first place (we will just eat whatever), then dealing with crying offspring (quite pleasant task, although may not seem like it) and the rest will just fall into its place. And this is what I did.
Eryk was happy and sleeping 15 minutes later and I could go and look through my fridge and come up with something that can be prepared in matter of minutes. At this point, I should mention, I already texted Pawel that he shouldn’t expect much and picking something up on his way home would be a good idea. So no pressure there. But I am digressing from what I have been saying – so – my fridge. I found there bunch of asparagus and some eggs and thought this combo showed some promise (not only for breakfast). What do you do with that – boiling asparagus and frying eggs of course. Add a delicious bread and sprinkle with some Parmesan cheese and I guarantee you’ll be happy with the result 🙂
And I could text again – “Forget the take out. Dinner is almost ready”.
Ingredients:
- bunch of asparagus
- eggs (depends how much you’ll like – you can count 1-2 per person)
- ~2 tablespoons of freshly grated Parmesan cheese
- 1.5 tablespoon butter
- pinch of salt
- sourdough bread
Instructions:
- In a medium, shallow pot – bring water to boil (enough to cover asparagus).
- Snap the ends of the asparagus, rinse and add to the boiling water.
- Cook for ~5 minutes, until asparagus are tender enough for your liking.
- Melt butter on a medium skillet and fried the eggs – if you like your eggs with sunny side up I recommend clicking here for the foolproof method.
- Once asparagus are ready place them on a plate.
- Put cooked eggs on top of them.
- Sprinkle with salt and Parmesan.
- Add few slices of your favorite bread.
- And enjoy!
