Farmer Cheese Sandwich Spread
In case you wonder what farmer cheese is I will tell you. It is white soft cheese made usually from cow’s milk. You may find it in “healthy” section of grocery store, unless you’re somewhere in Eastern Europe, then you can find it in any grocery store. Maybe it is popular in other parts of the world too, but this one is the only one I currently know of. Let me know if you encountered farmer cheese somewhere else!
Its taste is very delicate (bland is such a negative word!) and because of that it is easy to work with. Think of farmer cheese as white canvas, ready to be painted on. Whatever you do with it, will be unique, yours, and very tasty. What’s important you can go both directions – sweet and sour!
The mix I am sharing with you today is something my mom used to make for us (and still makes when we’re visiting!) for breakfast. Always served with hot coco or coffee and fresh bread. Mmmmmm.. so good. The flavors mix so well here – delicacy of the cheese with peppery flavor of radishes.
Ingredients:
- 16oz. (1lb) farmer cheese
- 1 bunch radishes (8-10 roots)
- 1 bunch scallions (5-7 stalks) OR chives
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 2-3 tablespoons half&half OR sour cream OR greek yogurt
*Instructions:
- In a medium bowl mix farmer’s cheese with half&half (or whatever you choose to use).
- Chop radishes into small pieces.
- Chop scallions OR chives.
- Add both, radishes and scallions, to the cheese.
- Add salt and pepper.
- Mix well. Taste it and adjust seasoning if needed.
*Quantities of chives/scallions/radishes are really just a suggestion (this is how much I like to put there). Feel free to experiment and choose the quantity that goes best with your taste buds.
Yield: ~8 servings (1 srvg – ~2 tablespoons)
