Gingerbread
This year I have more kitchen responsibilities than I am used to, just because I will be preparing Christmas Eve dinner on my own. It will be just for two of us, but still I want to preserve atmosphere of holidays and recreate as many traditional Polish dishes as I can (just so you know, it should be twelve of them).
To start my holiday recipe testing I chose gingerbread. It is not the only Christmas cake baked in Poland, but it seemed easy enough for me to try it first, so I did. I was a little bit worried when I saw how runny the batter was but my worries went away as soon as I could smell gingerbread from the oven. This recipe will give you light and fluffy type of gingerbread, not a dense one. The latter will come soon though, so do not worry!
Ingredients:
- 1 stick unsalted butter, melted and cooled
- 1 large egg
- 1/2 cup sugar
- 1 cup hot water
- 1 cup honey
- 2 1/4cups all-purpose flour
- 1 1/2tsp baking soda
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp salt
Instructions:
- Preheat the oven to 350°F, prepare baking dish (9-inch square dish will work)
- Mix the hot water with honey and set aside.
- In separate bowl mix all dry ingredients: flour, salt and spices. Set aside.
- In a large bowl whisk butter, egg and sugar until well blended.
- Start adding, alternating, honey mixture and flour, with mixer on a low speed.
- Pour batter into prepared pan.
- Bake for 1hr.
Yeld: ~13 slices (one loaf)
