Ladyfingers
Forgive me less than perfect shape of my ladyfingers. But at least you can see the importance of the pastry bag tip. Fortunately shape does not influence the taste! Not so much at least.
Ladyfingers can be eaten just as baked but often they’re used as a base for desserts. Tiramisu is the most famous one (and it is one I am planning to make soon), but if you have a favorite filling you can use that to make a sandwich cookie, or serve it with fruits, for instance pieces of strawberries. These light and delicate spongy cakes have crunchy outside and soft inside AND are only 31kcal a piece!
Ingredients:
- 1/2 cup and 1 tbs granulated sugar
- 3 eggs, yolks and whites separated
- 1 tsp vanilla extract
- pinch of salt
- 1/2 cup all purpose flour
Instructions:
- Preheat oven to 300°F.
- With an electric mixer start beating the egg yolks, gradually beat in 1/2 cup of sugar and vanilla. Continue beating until the mixture is pale and fluffy, about 3minutes.
- In another bowl start beating the egg whites until soft peaks form, add one tbs of sugar and continue beating until stiff peaks are formed.
- Transfer one fourth of the egg whites to the yolk mixture.
- Sift one fourth of the flour over the top of the mixture and gently fold in until partially blended.
- Then add one third of the remaining whites and sift one third of the remaining flour. Fold in again.
- Continue with half of remaining whites and half of remaining flour and then the last part of each.
- To summarize steps 5 to 7: you’re adding first 1/4, then 1/3, then 1/2 and then what’s left of whites and flour; folding gently after each step.
- Transfer batter to pastry bag and pipe even lines on the baking sheet. If you don’t have pastry bag use a plastic bag with cut out corner.
- Bake for 20 minutes, until the cookies are pale brown.
If they are soggy after cooling down, what happened to me few times, they are not baked enough. Too dry means they were in the over too long.
