Potatoes with bcon and onion.

Did you know that potato was domesticated over 7 000 years ago in Peru? And that average person eats about 33kg of potatoes a year? This crop is also very important in Central and Eastern Europe, where the consumption remains high.  Maybe because I grew up there I can’t imagine my life without potatoes – they can be eaten in so many ways. Just boiled, fried, baked. Prepared on their own or with variety of additions. Always satiating, always tasty.  This recipe results in comfort food just perfect for cold evenings. Perhaps could be followed by some tea spiked with raspberry liquor…

Ingredients:

  • 2.5lbs potatoes
  • 1 bay leaf
  • 1 clove garlic
  • 8oz bacon
  • 5 white mushrooms
  • 1 medium onion
  • 3/4 tsp salt

Instructions:

  1. Peel potatoes and cook them in water, with bay leaf, garlic and salt, for 15-20 minutes.
  2. In the meantime cut bacon into 1 inch pieces and start frying on a medium heat in a deep frying pan.
  3. Slice the onion, chop the mushrooms and add to the bacon. Cook until onion starts to be translucent.
  4. Once potatoes are tender transfer them to the bacon-onion mix, stir well. Add 1/2 cup of potato cooking liquid.  Mix well again.
  5. Cook for additional 3-5 minutes.
