Apple cakes remind me of my Grandma who made the best apple cake ever. I remember how lovely our house smelled when it was baking in the oven and how quickly it disappeared. Quite often the cake didn’t even make it from the pan to the serving plate or cake pedestal. It was gone before anyone could think about it.
Maybe because of these memories I always happily try new apple cake recipes. Plus Fall makes me nostalgic. So much has happened here recently that a pinch of nostalgia in my cup of tea and a piece of a good cake is exactly what I need.
The recipe I am sharing with you is from Moje Wypieki – very popular Polish food blog. Even if you don’t speak Polish I encourage you to check it out – if only to admire beautiful photography.

Ingredients:
- 17 oz all-purpose flour
- 1 stick + 6 tablespoons butter (cold)
- 2 egg yolks
- 1/2 – 3/4 cup sugar + 1.5 tablespoon
- 1 teaspoon baking powder
- 1.5 tablespoon plain yogurt
- 5 medium apples (Granny Smith will work best)
- 1/2 -1 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
Instructions:
- Cut butter into small chunks.
- In a food processor bowl mix flour, baking powder and 1/2 to 3/4 cups of sugar. Sprinkle butter over the mixture and pulse few times. Add egg yolks, pulse, add yogurt and process until the mixture resembles wet crumbs.
- Cover the bowl and refrigerate for 30 minutes.
- Peel and core apples. Shred 2 of them and the rest cut into small cubes.
- Preheat the oven to 340°F.
- In a medium bowl mix the apples with 1.5 tablespoon of sugar and cinnamon. Add vanilla extract, mix well. Set aside for ~30 minutes*.
- Prepare a springform pan – butter or line with parchment paper.
- Sprinkle about 1/3 of prepared dough in the pan and press it well to form bottom of the crust. Use half of the remaining dough to form the sides of the shell using the same technique.
- Bake it for 15 minutes and let it cook slightly.
- Increase the oven temperature to 360°F.
- Strain the apple/sugar mixture if there is a lot released sauce. Without removing shell from the pan fill it with apples and cover with the remaining crumbs.
- Bake for 1 hour. Let it cool in the pan before removing.
- Enjoy!
*Depending on your apples the resulting filling may be a little bit crunchy even after 1 hr of baking. This could be the case for apples that are not very ripe. If you prefer your apples to be very tender, then in step 6 put the apple/sugar/cinnamon mixture in a pan and cook on medium low for ~15 minutes, stirring occasionally. Then proceed with the recipe.
