Fruit salad
Although I really like sauces, cheeses, meats and potatoes (well, I was raised on traditional Polish diet, wasn’t I :)), during summer I tend to pick lighter menu more often. And I say “more often” because quitting potatoes altogether is out of the question. Especially new potatoes prepared with butter and some dill…mmmm…
My mom and I ate this salad frequently when I was teenager. It was supposed to help my skin get better, or so my mother said. I am not sure about its effectiveness in that area, but I know that I never complained, as taste of it was enough to ask for seconds.
You can change proportions if you want, it will turn out yummy anyway; but please don’t omit the oats! It is secret ingredient that makes the whole thing really special. Oats and kiwis.
Ingredients:
- 2 bananas
- 3 kiwis
- 6 strawberries
- 1/3 – 2/3 old fashioned oats
Sauce (if desired):
- 1 banana
- 1 tablespoon of lemon juice
- 1 tablespoon honey
Instructions:
- Heat up a skillet with oats. Mix frequently until lightly toasted and fragrant, for about 2 minutes. Set aside.
- Peel kiwis and bananas, hull strawberries.
- Slice fruits into smaller pieces.
- Mix all ingredients.
- Prepare the sauce, if desired: process banana, add honey and lemon juice; mix well. Add to salad and mix.
Yield: 2 generous portions
