Hello All! It’s Wednesday, but I am already ready for the weekend. Do you know that feeling? Hopefully the next few days will pass quickly and I will be able to enjoy some quality time with my husband. Recently we’re both so busy that I feel it is difficult to sit and talk, and actually listen to each other 🙂 Eh.. maybe it is just my impression.

Anyway, avocado ice pops are my choice for today. It is killing me to say it, but putting avocado into ice pops was not my idea. Some time ago I bought this wonderful little book called Paletas (You may have seen coconut ice pops recipe, which is also from this book) and there it was – avocado in sweet version. I tried it almost right away with a lot of curiosity and a bit of skepticism, and I loved the result right away! These ice pops are smooth (yay avocado fat content!), not too sweet and with a delicate hint of lime flavor. Believe me it is perfect combination. Also these are pretty healthy. We all know that avocados, although fatty are great source of monounsaturated fats (the good ones), and are also rich in potassium, folic acid and fiber. Who would have guessed – dessert that is actually good for you.

Ingredients:

  • 2 avocados
  • 1 lime (2 tablespoons of fresh lime juice)
  • 1 cup water
  • 1/2 cup sugar

Instructions:

  1. In a small pot mix water with sugar and bring to boil. 
  2. Cook stirring for ~2 minutes, until sugar dissolves.
  3. Set aside and let cool down to room temperature.
  4. In the meantime cut avocados in half and remove pits.
  5. Using a spoon scoop the flesh into a medium bowl.
  6. Squeeze lime to get 2 tablespoons of juice and add it to the bowl.
  7. Add water-sugar mixture.
  8. Using immersion blender process the mixture until smooth.
  9. Divide equally into 6 ice pops molds*.
  10. Place in the freezer. Ice pops should be ready in ~5 hours.
  11. Enjoy!

*Ice pop molds cost (in US) ~$10, however you may reuse yogurt or sour cream containers. It will work just fine!
