Clover cookies
St. Patrick’s Day is coming this weekend and I chose to make clover cookies for the occasion. Some of them are dyed green, some just sprinkled with sugar, but all taste buttery and this buttery aroma was filling out the kitchen during baking. I think this is why I like baking so much. The smell of fresh cookies, cakes, muffins makes me feel so cozy at my home. Especially when I can enjoy baked goods during breakfast, with my cup of coffee, curled up under blanket. You see it right; I eat my breakfast under blanket, at least now I do. Summer is a different story.
Recipe was adapted from Martha Stewart.
Ingredietns:
- 2 cups all-purpose flour, sifted
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 stick butter
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- green sugar, plus green food dye
Instructions:
- In a large bowl combine sifted flour, salt and baking powder. Set aside.
- In a mixer bowl beat butter with granulated sugar until light and fluffy.
- Add egg, beat until well incorporated.
- Reduce speed to low and add flour mixture, in two additions. Mix until well incorporated.
- Add food dye if desired.
- Cover dough with plastic and refrigerate for 30 minutes.
- Preheat oven to 350°F.
- Roll out the dough on floured surface until ~1/8 inch thick.
- Cut out clover shapes. If dye was not used cover with green sugar.
- Bake until edges just start to brown, 10-12 minutes.
Yield: ~30 cookies
